Job Overview

The Junior Sous Chef holds a leadership position within the kitchen department, reporting to the Executive Chef and is responsible for supervising the day-to-day running of the Kitchen team. This is a hands-on role involved in all areas of preparation and service, with excellent potential to mentor

a passionate, developing team.

Responsibilities And Duties

  • Coordinate the selection, training, development, and evaluation of employees and managers in the Kitchen’s hrough effective management and leadership to ensure that established cultural and core standards are met; long-range strategic planning for outlet operation.
  • Select, train, evaluate, lead, motivate, coach, and discipline all employees in the Kitchen’s food production area to ensure that established cultural and core standards are met.

  • Assist in the planning and development of menus for the hotel; ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration.
  • Ensure that sanitation standards as set forth by Four Seasons, local, state, and federal regulations are in compliance as well as the cleanliness and organization of the kitchen.
  • Set up control systems which will assure quality and portion consistency and the ability to create proper purchasing specifications as well as monitor and review operating criteria and develop an awareness of the importance of food preparation and quality.
  • Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments.
  • Comply with Four Seasons’ Category One and Category Two Work Rules and Standards of Conduct as set forth in the Employee Handbook.
  • Work harmoniously and professionally with co-workers and supervisors.
  • Adhere to meal break policy and follow proper payroll procedures.
  • Follow HACCP and local Hygiene laws at all times
  • Assist the Sous Chef in performing his duties and acts as Sous Chef in his absence.

Qualifications

  • Previous experience in similar and/or related fields in a 5* Hotel.
  • Hotel Management (desirable)
  • Proficient in English Language
  • Physically fit
  • Fluent English and additional languages desirable
  • Certificate in F&B would be an advantage
  • Physical abilities
